cookie monster

If you've been following me on instagram, you've seen allllll the cookies I've been baking lately. I love cookies, and I will not give them up just because wheat makes me sick and sugar give me zits. So, here we go. Deliciousness!

Ingredients:

1 cup browned butter, at room temp    *see notes!

(or 2 sticks unsalted butter, at room temp)
1 1/2 cups coconut palm sugar 
1 egg, plus one egg yolk
1 tablespoon vanilla
2 cups gluten free flour    **see notes!
1/2 tsp baking soda
1/2 tsp kosher salt
1 bar of the darkest dark chocolate you like, chopped
(1/4 cup coconut chips)



*You need to make the brown butter beforehand. I use Plugra or Kerrygold unsalted butter. It needs to solidify again before you can bake with it. The best way to do this is to follow these instructions for making brown butter. The brown butter gives these cookies a depth that is just amazing. It goes really well with the coconut sugar. If you want, you can substitute regular butter. But try the brown, it's soooooo worth the extra time!



**I tested this recipe with two different gluten free flours: the Cup for Cup brand, and almond flour from Digestive Wellness. I like the Cup for Cup the best. I found it at Whole Foods. The almond flour is okay, but I like the texture of the other better. The almond flour you can get at the grocery store (Bob's Red Mill) isn't ground finely enough for baking. Believe me, I've tried it and the texture is strange and very un-cookie like. It's better suited to savory dishes.




Directions:

Brown your butter, and let it cool on the counter. It will take a few hours, or overnight. I like to keep it in a glass measuring cup, stirring every so often so that the milk solids get distributed evenly. 



Heat your oven to 325.



Measure out your dry ingredients into a medium bowl and set aside.



Put the browned butter and the coconut sugar into your stand mixer's work bowl. Fitted with the paddle attachment, cream the butter and sugar on high for 3 minutes. 



Add the egg, stir to combine, then add the other yolk. Once it's incorporated, add the vanilla. Beat on high for 5 minutes. 



Scrape down the sides of the bowl and the paddle. Add the dry ingredients and mix on low until just combined. Add the chocolate chunks (and coconut) and mix until just combined.

Scoop out using a blue handled scoop or a 1/3 cup measuring cup. Place on a silpat or parchment paper lined cookie sheet, 6 to a pan. Bake for 10-14 minutes, the edges will be browned and the middle will look set.

These cookies are darker than normal cookies. It's the coconut sugar. They will look a lot browner than normal cookies. 


Makes 10 large cookies, with a little leftover cookie dough for you to nom on.

Most of the batches I made, the cookies were too fragile and crumbly. They were good, but I had to bake them in mini pie pans or they would spreaaaad out like crazy. Spread out they were too thin, they tasted much better when they were thicker. I didn't want to saddle you guys with having to bake cookies in a special pan, so I kept working. And hooooooray! 

So get out your mixer and bake some cookies!




My favorite chocolate and coconut chips to use:

86% chocolate is the darkest I can find at Whole Foods. I loooooove it. It's so smooth for such a high cocoa content! The darker the chocolate, the less the sugar.


I'll have a square or 2 of this after dinner sometimes. It totally satisfies my chocolate cravings.



Dang coconut chips are delicious. I found them at Safeway. I used to buy the trader joe's brand, but it has sugar. The Dang ones don't!

My most hated chore is cleaning the glass doors in the shower. You have to get in to scrub them, meaning you pretty much have to be naked and taking a shower to do so. 

Ugh, so not having glass shower doors if we ever own a home.

my kitchen aid has been busy

I've never been to Swig, but I heard that their sugar cookies are off the hook. 

I found a recipe here, and oh man, are they goooooood.

I love going to lunch with my man. We met up at the office and then headed to Super Duper. SO GOOD!!!

Doing some baking, so I thought I'd let you in on some of my secret weapons. 

Sonoma Syrup Co. Vanilla is THE BEST VANILLA EVER, it will take your baking to a whole new level. Try it!

Vanilla Bean Paste. No more buying dried out beans and trying desperately to scrape out seeds. Use a tablespoon of this for maximum wow.

Butter Vanilla Emulsion is great for boosting cake mixes.

this week...


I have made these cookies a few times now...and they are sooooooo good!
( I just ate 3 of them)


The recipe calls for caramel sauce in the dough- but I can never taste it in the finished cookie. So I got some sweet little caramel balls in the baking aisle at Target. I added them with the chocolate chips and they are perfect.

I also added a little swirl of Starbucks Caramel Sauce on top of each cookie right before baking. And that is when I learned that my husband hates caramel sauce. What? Who in their right mind hates caramel sauce?




This week, I have had the privilege of holding a teeny tiny baby.

Van is doing well, he is busy eating and not sleeping. I got to visit with them on Monday for awhile- I even got to feed him! I was pretty stoked.

What do Van and I have in common? We have both gained weight this week!


I took dinner over to them today, and I insisted (forced Mike to give him up) on holding him while they ate. He is quite strong for a newborn- he jerks his head around, and punches and kicks. It's hard to predict his head thrashing, you think you have a good firm hold on the little guy, then his head is suddenly on his chest. You move it back as quickly and carefully as you can, but he still gets upset and looks at you like "Hey! Not quick enough!"

He was trying to suck on his thumb today. He finally got it once his Soothie was in. Pretty cute. And he was all wide eyed and staring at me too.


I love little baby sighs. Their teeny bodies just relax a little, and then they sigh.

All is well.

Tomorrow we are having a BBQ for Danny's birthday. Ha! Now he gets to be 30!

loo-loo tuesday

In her apron, ready to bake!


Sewing Tuesday has officially moved to sewing every other day that isn't Tuesday. Why? Cause every Tuesday I have/will be picking Loo-loo up from her program, and on to fun and fabulous activities together.

Although I have been a horrible blogger lately, I have still been taking Loo-loo to fun places. The week before last we went to the Aquarium. She loved the penguins, and she was sooo good, even with all the screaming kids, that I got her a cute little stuffed penguin for her already too big stuffed animal collection.

Last week, we went to Ikea and got some new pots for the funeral plants that were dying in that stupid but pretty metal container they came in. Loo-loo got herself some lucky bamboo. She had never been to Ikea before, and all the way there she kept asking what I would buy for her.

"Ikea have Pop tarts?" No.

"Ikea have new swimsuit?" No.

"Ikea have bodywash?" Yes, but no I won't buy it for you because it smells really weird.

I finally had to tell her that Ikea is a huge store full of really cool, or really strange stuff. That explanation seemed to help.

Today, we were supposed to go see Despicable Me, but she changed her mind. She decided that she wanted to bake cookies and "rent" movies on Netflix "watch it now" instead. We watched some Fraggle Rock, and then we put our aprons on!

We made these wonderful S'mores Cookies....

Baked in a muffin top pan, I love huge cookies!


It was really fun for Loo-loo to fill the tops of the cookies with the different toppings- I am excited to make cookie day a regular event!

The recipe for these Giant S'mores Chocolate Chip Cookies is from my new favorite cooking blog- Picky Palate.

Loo-loo insisted that we take warm cookies over to the neighbors house so she could say hello to their little 2 year old girl. I think showing up at their doorstep in our aprons with giant cookies was a little uh, overwhelming? She was literally speechless.

Oh, and go see Inception. It was amazing! I think I may have a little crush on Joseph Gordon-Levitt. He is a man that looks hot in a suit. And I may have a tiny bad guy crush on Cillian Murphy- I don't think he is cute, but I like him as a bad guy. Something about his facial structure and mannerisms is so creepy, evil, whatever. I know he wasn't really evil in this movie, but still. Since I first saw him in Red Eye, I can't see him as any other character. And I love Ellen Page, of course.

Just go see it.

And make some cookies. They were delicious!

late night with a box of Tagalong cookies

...well, it was a full box. Now it's an empty box.




It's past 1 a.m.

In looking for something else, I clicked on an ad. (eep)

I just "watched" an ad for a flat belly/weight loss.

It was a half hour long. Halfway through, after I looked at the clock again and asked myself "when is this stupid crap going to end?" I pinched my love handles that had been unleashed due to my slack posture as a result of lounging in my comfy chair for the past oh- 5 hours, and decided to finish "watching". To see if it really was worthwhile. I got lots of time on my hands, why not try a diet that claims to be the end all of diets? It doesn't sound all that bad. I can still drink Dr. Pepper, and eat cake. Hm.

Seriously, why do I get caught up in schemes when I stay up too late?

It was $39.95, fully refundable no questions asked.

"Nah", I said to myself upon seeing the price. If it had been $19.95, I probably would have done it.

In all seriousness, I have gained a small amount of weight, and at this point, I am uncomfortable with it. Sure, I noticed the muffin top appearing above my jeans awhile ago. "No, I am not pregnant." If I was, I wouldn't be complaining. It's all fun and games until you have to go buy a new bra. Am I right?

(truthfully, I needed a new one anyway, so I bought one that's just like my favorite one that's falling apart, and it didn't fit. So I had to go and spend an hour in Victoria's Secret, being measured by a teenager and trying on every bra they sell. Meanwhile, the girl in the dressing room to my left was having a hard time finding the perfect bra for her perfect 32 dd sized chest. "they just don't make any in that size" the salesgirl kept telling her. Who is built like that in the real world? Besides of course the actual models in the VS catalogs? I don't know anyone. Do you?)

And then I tried on some cute shorts. And I couldn't button them up. That is when full alarm bells went off. I can pull off my normal jean size with almost a 10 pound range. Which is awesome, really. So when I can't button that button- it's game over. And I refuse to buy new clothes. (and Danny would too- since he'd be paying for them) I also refuse to jam myself into too-small clothes- it's like my really lame uncle once said...

...or kinda sang as he tried on my evil ex's brand new suit jacket...

...as the arm seams ripped. Ha, twas a funny moment in history.

Anyway.

Wii fit?

I have been eating better this week. My friend Allisen re-introduced me to hummus (I ate too much of it when I was Vegan, so I swore it off) with carrot sticks. Not baby carrots, you are right, the sticks are better. And I have had an apple a day too.

So, wii will see what happens next week. Ha, late night pun.

And another And- is anyone else dying to hear about cjane having her baby?? When? Where? Girl or Boy???? I have been obsessively checking all of her blogs since Thursday night- and nothing!

the ladies who lunch

I met my friend Kelly today for lunch- (one of the perks of not having a job) at Paradise Bakery. It was so busy! So we had to wait in line forever- but we haven't seen each other forever, so we had a lot to catch up on.

I made her some really fun stuff (click) before she had her baby, but I didn't have the chance to give them to her until today. I also made her little girl Annie something special.

Sweet baby Jack slept right next to me the whole time! He coughed twice, and it was the tiniest, cutest cough I have ever heard!

I had such a wonderful day! I looked forward to this lunch all week- not the actual lunch part, although the turkey sandwich was delish- but the outing and socializing with a friend and her adorable kids. It was such a beautiful day, and seeing Kelly and meeting baby Jack for the first time was just perfect.

valentine's cookie party

Much success!

We had so much fun, we decided to have these cookies parties year 'round! And since I make sugar cookies for most big holidays- (easter, halloween, christmas, v-day) I don't mind sharing the decorating (and baking) with everyone! (less stress, more fun!)
